Blanco Cellars and The little Cheese Shop was created after 20+ years experience in the food and wine industry with a desire to entice palates and bring 'Better Booze (and cheese) to the Back Country'. Since childhood, owner Vanessa Trout was driven by the perfect bite.

That mission led her on a vast & exciting food & wine industry career that took her around the world & to unforgettable people. From Chicago sous chef at Les Nomades, cheffing at Trio Restaurant and Napa Valley personal chef, to winery marketing & sales with Swanson, Turley Wine Cellars & Henry Wine Group. 

Additionally she was the New Zealand wine ambassador with Craggy Range Winery, a Master of Wine student, marketing & purchasing manager at Chicago Distributor Cream Wine Company, harvest & kitchen help at Domaine de Villaine in Bouzeron, France, and visitor to many major wine regions before settling in Colorado. 

Eating healthy & living consciously growing up gave her an appreciation for nature and shaped her life choices. Now, through the store, tastings & education, Trout can offer delicious & memorable nourishment and beguiling beverages that are better on consumers, animals, and the lands. Education is the backbone of the shop, bringing her experience, knowledge, travels and good times to her customers.
